Sodium hexametaphosphate is an inorganic compound with the chemical formula (NaPO3) 6. It is a white crystalline powder that is soluble in water but insoluble in organic solvents. It is mainly used in the food industry as a quality improver, pH regulator, metal ion chelating agent, binder, and expansion agent.
Purpose:
Sodium hexametaphosphate is used in meat products, fish sausages, ham, etc. It can improve water holding capacity, increase cohesiveness, and prevent fat oxidation; Used for soybean paste and soy sauce to prevent discoloration, increase viscosity, shorten fermentation period, and regulate taste; Used for fruit drinks and refreshing drinks, it can increase juice yield, increase viscosity, and inhibit the decomposition of vitamin C; Used for ice cream, it can improve the expansion ability of Chemicalbook, increase the volume, enhance emulsification, prevent paste damage, and improve taste and color; For dairy products and beverages to prevent gel precipitation; Adding it to beer can clarify the liquid and prevent turbidity; Used for canned beans, fruits and vegetables, it can stabilize natural pigments and protect food color.
